HOW TO GROW

Degree of difficulty: Easy; little work involved.

Sow: April to mid-July in rows outside.

Spacing: Thin the seedlings out to 15cm (6in) apart; allow 30cm (12in) between rows.

Routine care: Keep plants well watered in dry spells and weed regularly.

VARIETIES

1 Swiss chard – has long, thick, white, slightly flattened and ribbed stems topped by deep green, shiny, leaves with a lot of substance and texture. The plants reach 45cm (18in) high and 30cm (12in) across.

2 Ruby chard – has slender bright red stems topped by purplish-tinged dark green leaves; it’s sometimes mistaken for rhubarb, but rhubarb that’s only this big is in deep trouble. Ruby chard is not quite such a strong grower as Swiss chard and is prized more for its decorative qualities than its culinary virtues.
