The goal of the Farmer is to eat less over the day while keeping blood sugar levels from dropping. The best foods for boosting blood sugar are grains, since they’re converted into blood sugar with digestion. And the best grains for Farmers are whole grains, such as whole wheat and whole oats. Whole grains, as opposed to refined grains like white flour, provide a steadier stream of glucose into the Farmer’s system because they have more fiber, which helps control the release of sugar. The next best way to help support the Farmer’s blood-sugar levels is to eat protein, since it can also be turned into glucose.

The last choice to help maintain blood sugar is food high in fat such as fried items, salad dressings, fatty meats, biscuits, croissants, fast food, cheese, ice cream, and even nuts. Fat has the most calories and provides the least glucose. Our bodies have no way of converting fat to glucose; we can only do that with carbs or proteins. This is why the ideal diet for Farmers is a low-fat, high-fiber, high-grain diet that includes protein. Whole grains provide a steady source of glucose, and reducing fat helps control calorie intake.

The Farmer’s goal is not to eliminate fat entirely. That’s not possible, and it’s not even desirable. There are some healthy fats that are important, even for Farmers in small amounts. Some fat is essential. In fact, there are a few types of fats that are called “essential” because our bodies need them and we can’t make them (very much like vitamins). These essential fats are linoleic acid (an omega-6), alpha-linolenic acid (an omega-3), along with the fish oils EPA and DHA (eicosapentaenoic and docosohexaenoic acid). But that doesn’t mean a Farmer needs to eat more fat. Small amounts of these essential fats are enough. The point is that Farmers should reduce fat, not eliminate it. Some good sources of healthy fats are fish, nuts, seeds (in small amounts), and eggs (especially “high omega”).
