PEACH SHRUB
MAKES 32 CUPS
Shrubs are syrups made from fruit, herbs, honey or sugar, and vinegar. They are refreshing, healthy alternatives to soda. They are also great for stimulating the appetite, which will aid in digestion.
2 cups organic peaches, cut into chunks (about 3 to 4 peaches)
1 cup raw sugar or raw honey
½ teaspoon molasses
1 cup red-wine vinegar
½ cup peach leaves
¼ cup fresh cinnamon basil leaves or lemon verbena leaves
Seltzer water

In a quart jar, combine the peaches, sugar, and molasses. Stir and mash the peaches. Screw on the lid and set aside in a cool, dark place for 8 hours.

In a separate quart jar, mix together the red-wine vinegar, peach leaves, and cinnamon basil leaves. Screw on the lid and set aside with the first jar for 8 hours (or up to 24).

Once 8 hours have elapsed, pour the vinegar mixture onto the peaches and sugar. Mix well and replace the lid.

Return your jar to a cool, dark area and let sit for 1 week.

Strain the peaches, leaves, and basil, returning the liquid to the jar. Compost the fruit and leaves. Put the lid on the jar and refrigerate for 1 week, tasting daily. Once the vinegar flavor has mellowed, it is ready to use.
TO USE: Add 1 ounce shrub to every 6 ounces chilled seltzer water.
VARIATIONS: Experiment with using other fruits and their leaves, such as blackberries, raspberries, apricots, or pears.
STORAGE: Store in the refrigerator and use within 6 months.
