To make elderberry wine

Ingredients: 1.3kg ripe elderberries, 1.6kg sugar, wine yeast

Crush elderberries, add 4 litres of water and yeast, cover with cloth and leave for 2 days.

Strain liquid through muslin cloth, add sugar.

Place in 5-litre container (e.g. demijohn) with airlock, wait until bubbling ceases.

Siphon off residue, seal in bottles.

Wait 6 months or more if you have the patience.

Drink (not all at once).

Making wine at home is a dying art, but it is so easy and cheap and the results can be delicious. This recipe makes a rich, port-like red wine; I have kept some for twenty years and it gets better and better. Many other fruits also work well, for example blackberries and blackcurrants, or gooseberries for a white wine.
