Lots of Colors, Shapes, and Uses

POSSIBLY BECAUSE PLUMS originated in so many different places, few fruits vary as widely in size, shape, color, and flavor. The range is more varied than that of apples — from small, native American types to large European prune plums and giant Japanese cultivars. Despite their differences, each type is recognizable as a plum, both by taste and by appearance. Similar to its peach cousins, plum cultivars may be either freestone (with a pit that separates easily from the flesh) or clingstone (with flesh that clings to the pit). The dried prunes we buy are made from European prune-plums that when fresh contain less moisture and more sugar than other plums.

If you intend to grow a few plum trees in your orchard, you should know about the three main groups, their variations, and the crosses with plum fruit relatives. Although the trees and fruits of each species look similar, they’re different enough that they usually won’t pollinate each other. This, of course, causes trouble for growers who plant two unrelated plum trees.
