A vinegary sweet-and-sour cucumber salad would provide a good contrast to the richness of the curry. For a beverage, ice cold beer or a spicy, slightly sweet Gewurztraminer would fill the bill nicely.

This recipe can be easily doubled to serve 4. To serve more than 4, multiply the recipe accordingly, but you will need to use 2 skillets.

Although this recipe is best cooked just before serving, all the ingredients can be readied earlier in the day, including the making of the Béchamel. (If the béchamel is cold when you are ready to use it, heat and whisk it before adding to the sauté.)
