Rampicante Italian Vining Zucchini is among my favorite of all vegetables, and is almost unheard of in America—which is a shame. This beautiful zucchini tastes sweeter than any other zucchini, but best of all, the fruit becomes a winter squash with a butternut taste when left to mature in the garden. And all the seeds are contained in a single bulb at the bottom of the fruit.
If left to mature on the vine, rampicante stores excellently through winter, developing a butternut taste and texture. In storage and even late in the garden, rampicante slowly fades to a pale butter color. We use this winter squash in the crock pot with a roast, raw in salad, in many soups, with oven-roasted vegetables, or sautéed.
Like rampicante, certain other normally perishable vegetables are available in varieties traditionally kept in the cellar, some through Christmas and beyond. Seed Savers Exchange members offer the following:
