Hazan, Marcella. Stern, dry-witted advocate for Italian food in America, revered for her cookbooks The Classic Italian Cook Book (1973) and More Classic Italian Cooking (1978), and for disabusing Americans of the notion that Italian food was chiefly a function of Mob-movie histrionics and vast bowls of red sauce. A PhD in biology, she was a latecomer to cooking, turning to it only in the mid-1950s, when the career of her husband, Victor, required that the Hazans live in New York. Relying on her keen TASTE MEMORY, Hazan elegantly re-created the dishes of her Emilia-Romagna childhood, began giving cooking lessons, and was eventually discovered by CRAIG CLAIBORNE. Often posited as “the Italian JULIA CHILD,” though the chain-smoking, no-nonsense Hazan willfully resists coming off as cuddly and is mildly peeved by the comparison.
