I’ve always felt that Ronald Taylor and Barbara Carter missed the boat by not including any actual insects in their recipe for Honey Bee Granola Bars, one of several interesting desserts (and, in this case, a clever reworking of traditional noninsect energy bars) in Entertaining with Insects. So here I am, embellishing on their early effort. The title of this dish is taken from the hipster’s slang of my mother’s generation. Mom liked anything with coconut in it, so this one’s for her.
