Protein and Calories

The protein content of potatoes on a fresh weight basis is relatively low but on a dry weight basis the protein content is similar to that of cereals and very high in comparison with other roots and tubers. The protein in potatoes is of high quality. Potatoes do not contain fat or cholesterol. While the calorie content of fresh potatoes is low, it can be increased significantly when high fat ingredients are added in preparation. By modifying the type and quantity of the ingredients used in preparation, you can include potatoes in weight-reducing diets while still providing desirable nutrition.
