Rice was not the only food that was used as currency in Democratic Kampuchea. Meats were also in high demand. The cooperatives did not serve meat regularly (if at all), so much of the population was not eating enough protein to survive.

Lack of protein causes a type of malnutrition called kwashiorkor, which is characterized by an emaciated appearance but with a swollen belly, as well as hair loss, inflammation of the skin, loss of muscle mass, decreased immunity, weakening of the heart and respiratory system, and stunted growth and development in children.34
