1 recipe Basic Pizza Dough
1 tablespoon olive oil
8 ounces provolone slices, cut into strips
Salted anchovies (optional)
Dried oregano
Grated Parmesan cheese
1 . Prepare the dough according to the recipe. Grease two (10-inch) round pizza pans or baking sheets, and roll or stretch the dough into shape. Score the pizza crust several times with a fork. Preheat the oven to 500°F.
2 . Bake the pizza crusts for 10 minutes.
3 . Remove the crusts from the oven and brush the tops with the olive oil. Evenly distribute the provolone slices on top. Add some salted anchovies (if using).
4 . Sprinkle liberally with oregano and cheese. Place back in the oven and continue baking until the pizzas are golden and the crust is crisp, 3 to 8 minutes. Check the bottom for doneness.
Substitution Tip: Like focaccia, pizza bianca can be used in place of bread. You can skip the provolone in the recipe and simply drizzle the dough with the oil and herbs. Prepare the pizza in a smaller pan for a thicker crust and use this as a flatbread. Flavored with herbs and grated Parmesan, this also makes great panini bread for prosciutto and Italian salami.
