Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper.

Trim off and discard 1 inch from the stem ends of the broccoli rabe and place the greens in a bowl. Add the oil and vinegar and toss to coat. Spread the broccoli rabe evenly on the prepared pan.

Roast until tender-crisp, 20–25 minutes, stirring once halfway through roasting. Remove from the oven, season to taste with salt and pepper, and transfer to a warmed platter. Using a vegetable peeler, shave the cheese over the top. Serve right away.
