Canaigre, Wild Rhubarb (Rumex hymenosepalus): Natives harvested this plant and the pioneers did too. Use the stalks like you would rhubarb. Young leaves are fine to eat, and seeds can be harvested and cooked. Grows around the Southwest from 0 to 6000 feet elevations in sandy, rocky, and generally alkaline soils.
TSATSAI (Brassica rapa var. narinosa): Also called Tatsoi, has a mild mustard flavor, and is good in salads or cooked. Grow as you would the other choys. Stems are pickled in some cultures, fermented in others.
