Mix the water, sugar, and lime juice in a small bowl. Taste, and adjust until the sweet and sour is balanced. Stir in the fish sauce and set aside.

In a mortar and pestle, crush the garlic and chiles into a paste. Scrape the paste into the lime mixture and stir well. Let stand for 20 minutes before serving, or store, covered and refrigerated, for up to 2 days.

These are quick to make and perfect for gifting, or for nibbling throughout the day (which is my tactic). With their distinctive combination of sweet, heat, and spice, these candied nuts satisfy as a snack and add more than just gilding to a scoop of vanilla ice cream. It will look as though there is too much glaze as the nuts go into the oven—don’t fret. As they bake the syrup will thicken and gather around the nuts. By the time they’re done, the pan will be almost dry.
