Sweet Potato Breakfast Hash

Ingredients

1 large sweet potato, peeled and diced. 1/2 red bell pepper, diced

1/2 green bell pepper, diced. 1/4 red onion, diced

2 tablespoons of olive oil. 1/2 teaspoon paprika

1/4 teaspoon garlic powder. 1/4 teaspoon salt

1/4 teaspoon black pepper. 2 large eggs

Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the diced sweet potato, bell peppers, and red onion with 1 tablespoon of olive oil, paprika, garlic powder, salt, and black pepper.

Spread the mixture evenly on a parchment paper-lined baking sheet.

Roast in the oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and lightly crispy.

While the vegetables are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.

Crack the eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy).

Remove the vegetables from the oven and divide them between two plates.

Top each plate with a cooked egg and garnish with fresh parsley if desired.

Serve immediately.
