VIRUSES POTENTIALLY SPREAD BY CONTAMINATED FOOD

Viruses that are found in human or animal feces have the potential to infect the gastrointestinal tract of other individuals or other species and therefore could be transmitted by contaminated food. New metagenomics and subsequent seroprevalence studies indicate that many previously unknown viruses are in fact quite common. This list of potential bad actors is increasing rapidly due to the accelerated pace of identification of novel viruses by high-throughput nucleic acid sequence analysis. The list below is by no means complete, and for many of these newly discovered viruses, information is relatively sparse. Some of the viruses described below are implicated in gastrointestinal illnesses, while others are implicated in respiratory disease, despite being shed in stool in both circumstances. Thus, clear evidence of enteric transmission is sometimes lacking for different viruses. In some cases, the described viruses are newly discovered and their propensity to cause morbidity is incompletely defined or unknown. In other cases, fecally shed viruses are implicated as the causative agent in systemic infections causing serious medical consequences. Lastly, while animal tissues and fluids (i.e., milk, blood) consumed for food are not ordinarily thought of as sources of foodborne virus infection, there are exceptions, as described below.
