8 ounces feta cheese, drained and crumbled

2 roasted red bell peppers from a jar, drained

1 tablespoon red wine vinegar

1 garlic clove, peeled

1 teaspoon Calabrian chile paste (optional)

¼ cup olive oil

Place the feta, bell peppers, vinegar, garlic, and chile paste (if using) in the bowl of a food processor. Pulse until combined, about 2 to 3 minutes.

With the food processor running, pour in the olive oil in a slow, steady stream until the dip is smooth and creamy. Serve cold with bread or vegetables.
