Chicken wings and hot sauce

I have baked this mildly spiced chicken dish, but you could also cook it on the grill. Just make sure the heat is low enough for the meat to cook right through to the bone.

For the marinade:

vegetable oil: a tablespoon

light soy sauce: a tablespoon

lime juice: a tablespoon

fish sauce: a tablespoon

a clove of garlic

a stalk of lemongrass

sugar: a level teaspoon

chicken thighs: 8 to 12, depending on their size
