In a bowl, mix the brown sugar, light and dark soy sauce, Chinese five-spice, cornflour, sesame oil, Shaoxing rice wine, salt and pepper. Season to taste.
Add the pork belly cubes. Mix well. Leave to marinate for at least one hour or overnight.
Heat the cooking oil in a wok or big frying pan, add the onions and garlic, cook until soft and fragrant.
Add the pork marinated pork belly and mushrooms, cook for 10 mins, mix well with the onions and garlic.
Transfer to a slow cooker. Cook for 6hrs (low) or 4hrs (high). Season to taste. Once cooked, serve with steamed rice and stir-fried vegetables.
