HOW TO SMOKE MEAT WITH FRESH HERBS
If you have an outdoor grill or even want to try the stovetop method, adding fresh herbs will impart an especially wonderful aroma to your foods.
1 Get your smoker going so that the coals are giving off a low radiant heat of about 200°F to 250°F.
2 Gather a bunch of highly aromatic herbs with strong oils, such as rosemary, sage, oregano, and thyme. Tie them in a bundle with twine or simply bunch them, and using tongs, carefully tuck them in to the coals or wood chips.
3 Place your meat on a grill rack above the coals and close the lid. Allow it to smoke and the meat will soak up the aroma of the herbs as it does.
