Fingers Bunched

Used this position to slice or mince small items such as garlic, leeks, or shallots. This position is similar to the fingers-closed grip except that all the fingers are bunched around the thumb. The middle finger is still the stopper. The arm is still in the sling position.

The No-Roll Hold

Use this position to cut a whole carrot or anything that could roll as the knife makes contact.

• Place the index finger on top of the item with the second joint at a right angle to the food—this is the stopper. Thumb and middle finger are slightly behind the index finger on opposite sides of the item. The back of the item is lightly held in place by your palm.

• Creep the hand back with each stroke of the knife for the next cut.
