BARBECUE BRISKET OF BEEF

1 (4-pound) trimmed beef brisket

1 cup dry white wine

3 cups apple cider

½ cup honey

2 tablespoons Dijon-style mustard

½ cup soy sauce

2 tablespoons brown sugar

1 tablespoon minced garlic

1 tablespoon minced ginger

1 tablespoon whole coriander

2 sprigs fresh thyme

1 tablespoon minced garlic

Combine the wine, cider, honey, mustard, soy sauce, brown sugar, garlic, ginger, coriander, and thyme in a Dutch oven or heavy roasting pan. Add the brisket, cover tightly and place in the oven. Heat oven to 350° F. and roast for 2 hours. Remove the brisket from the roasting liquid, cover, and set aside. Transfer the roasting liquid to a medium saucepan over medium heat until it has reduced to a glaze.
