Marketing lies at the core of what a restaurateur does. Over the years, as I’ve gotten deeper into it, I’ve found that I love engaging with people, building relationships, being known and respected in the community. It’s a really fun part of my job! If you want to succeed in this business, you have to find a marketing style and promotional tactics of your own. You need to get out there and spread the word about your brand so that more and more people come in and check you out. If you like food but don’t like marketing so much, then maybe you’re going into the wrong business. At the very least, I’d advise you to find a partner who does like promoting your brand and, better yet, is great at it.

With all the different marketing activities I do, I still care a lot about getting good reviews from the food critics. In fact, I have my own little good-luck ritual. Just like the time I was waiting for my first review, I go out in the middle of the night to get the paper as soon as it comes out of the loading garage. It hasn’t failed me yet.

Once, while I was sitting in the parking lot in a bad section of town waiting for a review in the Boston Herald, a prostitute knocked on my window. She wore tight leggings, a short skirt, and high heels. “Honey, you looking for a date?” I assured her I wasn’t. Actually, what I said was, “No way, get away from me!” I started my car and drove a few hundred yards down the street to park there. The only thing I was after, and still am after, is someone important in the media saying we’re great and worth visiting. I want to keep my restaurants alive, making money, and humming with people. I want them busier—and happier—than ever.
