297. Inviting Tofu and Veggie ‘Stir Fry’

Ingredients

12 ounces Tofu, mashed

2 Shallots, diced

1 Tomato, diced

1 cup Parsnips, chopped

2 tbsp Olive Oil

2 tsp Sherry

¼ cup Parsley, chopped

1 tsp Garlic, minced

3 cups Water

Salt and Pepper, to taste

Directions

Heat oil on SAUTÉ mode at High. Add shallots, parsnips, garlic, and tomatoes; cook for 3 minutes, stirring occasionally. Stir in tofu, sherry, and season with salt and pepper.

Seal the lid, set on STEAM, and cook for 4 minutes at High. Once done, do a quick release.
