There are two types of canning you can do to preserve food safely: water bath canning, and pressure canning. Water bath canning is for foods that are high in acidity, such as fruits or pickles, as this form of canning does not get as hot as pressure canners so those acids ensure bacteria such as botulism cannot grow within the jars. Pressure canning is excellent for all other varieties of food, as it reaches high temperatures and ensures spores and bacteria are properly killed off so the foods themselves are safe to consume.
