Have you ever wondered what goes on underground when you plant a pea seed? This photo shows different stages of growth.

Finally, baby greens are the pre-teens of seed growing. They are easily identifiable as miniature lettuces or greens, but they are harvested before they are fully formed, when they are still a bit more nutritious than the adult plants and are more tender and sweet.

Sprouts

There are several ways you can grow sprouts—in plastic sprouting trays, in sprout towers, or in cloth sprouting bags. The most common way to grow sprouts is by using glass canning jars with either special draining lids or a couple layers of cheesecloth over the top secured with a rubber band.

However you grow them, do not use regular seeds that you would plant in the ground. Look for a reputable source of sprouting seeds; make sure that whatever seed sprouter (container) you use is scrupulously clean. Be sure to follow the directions on the seed packet precisely. See the end of this section for additional warnings before you decide to grow sprouts.

The basics of sprouting, no matter which method you use, are:

• Soak the seeds in fresh water in a sterilized container. Soaking time varies based on variety, so check the seed pack for instruction.

• After soaking, rinse the seeds with clean water and put them into your sprouter.

• Rinse with clean water two or three times a day and drain.

• Most sprouts will be ready to eat in anywhere from three days to two weeks. Rinse and drain one last time.

• Eat immediately or refrigerate and use within a couple days.
