Kale harvests are plentiful. The leaves can be picked in the baby leaf stage for fresh eating in salads. Or it can be harvested as mature leaves that are best for cooking.

SWISS CHARD

If I had to describe the taste of Swiss chard I would say it is a mix between beets and spinach, and technically I would be spot-on because chard is in the same family as beets and is also known as leaf beet or spinach beet. Swiss chard, or simply chard, is mostly grown for its leafy tops, but its root is edible. However, because most of the energy of the plant goes to developing the leaves, the root is hard and fibrous, so it may not be as palatable as a beet. I enjoy using this nutrient-dense green the same way I would prepare spinach: in salads and sandwiches.
