1 In a blender, combine the chipotle in adobo and sauce, all the other chillies, the curry powder, onion, tinned tomatoes, roasted red pepper, honey, dark brown sugar, cider vinegar, balsamic vinegar, garlic and thyme leaves.

2 Blend until completely smooth, transfer to a heavy bottomed pan (you’ll risk burning the sauce if you use a cheap, thin one) bring to the boil, then simmer uncovered for 10 minutes, stirring to ensure the sauce doesn’t catch. Season to taste with salt. Decant into sterilised bottles and store in the fridge for up to a month. Never let anyone in your house eat anything again without some of your wonderful homemade condiment on it.

If you want to make larger batches, just scale up the recipe by multiplying all the ingredients to the amount you want.
