Stone fruit is a natural partner to the rich, savoury flavours of duck and here that sweet contrast is provided by Fortnum’s Morello Cherry Preserve. Save the fat once the duck has been cooked and use it to roast potatoes until deliciously crisp.

6 duck breasts, skin on

1 tbsp Chinese five spice

2 tsp plain flour

200ml ruby port

500ml hot chicken stock

2 tbsp Fortnum & Mason Morello Cherry Preserve

Salt and freshly ground black pepper

Watercress, to serve
