Serves 4 as a starter

4 plump pigeon breasts

2 garlic cloves

5 juniper berries

½ tsp fennel seeds

8 white peppercorns

½ tsp wholegrain mustard

6 baby beetroot and their leaves

Extra virgin olive oil

Maldon salt and black pepper

4 tbsp crème fraîche

1½ tbsp Cabernet Sauvignon vinegar

½ teaspoon Dijon mustard

A pinch of nigella seeds

2 tbsp elderberry syrup – see page 336.

If you don’t have elderberry syrup, the juice from crushed bilberries, blackberries or blackcurrants make a good stand-in.
