Red clover. This perennial prefers the cooler temperatures of northern states. Sow in early spring. This crop is exceptionally fast to decay and thus of more immediate benefit to following crops. (¾ oz./100 sq. ft.; ½ lb./1000 sq. ft.)

Soybeans. Annual soybeans need warm weather; sow after soil has warmed and turn under in summer or fall. If growing for organic material rather than the beans themselves, select a long-season variety, as these will make the largest plants. (6 oz./100 sq. ft.; 4 lbs./1000 sq. ft.)

Sweet clover. Annual varieties prefer cooler climates; biennial types are good for all except the Gulf states. These tall plants develop deep roots that can penetrate difficult soils and hardpan; they tolerate less fertility than alfalfa and produce almost as much nitrogen. Sow biennials in spring and turn under the following spring to secure maximum growth and nitrogen fixation. (¾ oz./100 sq. ft.; ½ lb./1000 sq. ft.)
