The Best Techniques for Roasting

The best roasting techniques depend on the vessel you’re roasting them in. If you want to roast something small, say a couple of chicken thighs and some chopped potatoes, then you’ll get the best result from a no-frills half sheet pan. The lower sides will help to brown everything quickly and anything that brings a lot of moisture to the pan won’t get mushy. If you’re roasting large cuts of meats or roasts, then you’ll want to opt for something with higher sides to help it roast more evenly. If you can put it up on a rack, even better! The air will circulate around it, cooking it nice and evenly. Keep it shallow for smaller items that need more browning.
