Sauté ½ lb. sliced smoked sausage and ½ lb. cubed ham in ¼ c. hot oil until browned. Remove from saucepan and then sauté 1 c. chopped onions, 1 c. chopped bell pepper, 1 c. chopped celery, 1 c. chopped scallion, and 2 cloves minced garlic in meat drippings until soft. Add one 16-oz. can drained tomatoes, 1 t. thyme, 1 t. black pepper, ¼ t. cayenne, and 1 t. salt and cook for 5 min. Stir in 1 c. converted rice. Mix together liquid from tomatoes, 1 ½ c. chicken stock or water, and 1 ½ T. Worcestershire sauce to equal 2 ½ c. Bring to boil, reduce to simmer, add 2 lb. raw, peeled shrimp and the ham and sausage and cook uncovered for about 30 min.
