Steps:

1.Preheat the oven to 375°F.

2.Into a large pot of boiling water, add the potatoes and cook 10 minutes or until fork tender.

3.Place the potatoes into a food processor and puree. Spoon the puree into a large bowl.

4.Stir in the butter and heavy cream.

5.Stir in the egg yolks, one at a time, until well blended and then stir in the smoked ham.

6.In a mixer with the whisk attachment, beat the egg white until stiff peaks form. Fold the egg white into the potatoes.

7.Spoon the mixture into a 2-quart soufflé dish (do not oil the soufflé dish or it won’t rise high) and sprinkle the top with the ground white pepper.

8.Place into the oven and bake 45 minutes. Do not open the oven door to check it!

9.Remove from the oven and serve within 10 minutes.
