DUNGENESS CRAB RECIPES

The Dungeness Crab Festival in Port Angeles offers the seafood lover a delectable variety of Dungie and fish dishes under one roof (or in this case, a tent). The standard is boiled crab, which is tasty on its own. Other familiar preparations included a silky Dungeness crab bisque and an absolute gobble-worthy crab quiche. There were also a few distinctive concoctions, some culturally inspired, that paired crab with foreign ingredients I never would have thought to use.

I’ve included a trio of recipes for what I consider the stand-out dishes of the fourteenth annual Crab Fest. One of those recipes, the quiche, taught me Dungeness crab and eggs can be an exquisite pairing. When I returned home from the festival, I went to work perfecting my omelet and then folding in fresh herbs and barely warm, fresh Dungeness claw meat. To this day, I don’t think I’ve had a more sublime breakfast.
