The second layer can be attached to the lower layer by screwing down from above; in the same way as you did for the pallet bed. Just be sure the screws are countersunk.
You can add a back rest by standing additional pallets on their end and then screwing them onto the back of the couch. If you need to create an angle for the back of your couch then the easiest way is to add a batten to the back of the top level of your couch. When you screw the back into place it will be at an angle.
Now you just need to create your cushions and sit back!
