MAKES 2 CUPS

½ cup chopped peeled fresh horseradish or ½ cup jarred horseradish (NOT the pink kind!)

2 cups heavy cream

Salt to taste

Horseradish adds heat to a dish, but because it’s related to wasabi and other mustards, the kick is more savory and rounded than the sharp heat of chile peppers. This sauce was specifically designed for Smoked Cauliflower and Waffles, but it balances all sweeter vegetables, like broccoli, Brussels sprouts, or carrots.

TO MAKE IT VEGAN

Use 6 tablespoons horseradish and substitute unflavored soy milk for the cream.
