For a salad that breaks free from the lettuce-based model, try this mix and match of chopped-up superpowers. The radish brings a peppery crunch while incorporating an antiviral, antifungal, and blood-purifying element, and like the cabbage and broccoli here, is another member of the health-supportive cruciferous family. Serve with Golden Turmeric Dressing (page 223) or your dressing of choice along with Smoky Split Pea Soup (page 254), or Sloppy Joes (page 281).
1 cup chopped zucchini (½-inch pieces)
1 cup gold bar or crookneck squash (½-inch pieces)
1 cup chopped broccoli (½-inch pieces)
½ cup thinly sliced radish
1 cup chopped cabbage (1-inch pieces)
¼ cup thinly sliced red onion
½ cup cherry tomatoes
2 tablespoons minced fresh cilantro
1.Combine all the ingredients in a bowl and mix well.
2.Toss with your dressing of choice.
VARIATIONS
Add a handful of mixed organic salad greens or arugula.
Top with raw or toasted (page 101) nuts or seeds, such as sunflower, pumpkin, or hazelnuts.
Replace the cilantro with fresh basil, tarragon, parsley, or dill.
Add sliced avocado.
