Herbed Mahimahi

MAHIMAHI IS a sweet, firm-fleshed white fish. Any firm white fish, such as cod, haddock, bass or grouper, may be used.

1ΒΌ pounds mahimahi fillets

1 teaspoon olive oil

4 tablespoons butter or margarine

2 tablespoons pine nuts

3 tablespoons chopped fresh basil or parsley

Salt and freshly ground black pepper to taste

Preheat broiler for 10 minutes. Place fish on a broiler pan and brush with oil. Broil for 8 minutes. To check for doneness, stick the point of a knife into the flesh. If it is opaque, it is ready. Broil for 2 more minutes if necessary.

While fish is cooking, melt butter with pine nuts. This can be done in a microwave oven on high for 1 minute. Remove fish to a serving plate and pour butter mixture over it. Sprinkle with basil. Add salt and pepper to taste.
