CRUMPETS WITH EGGS AND SMOKED FISH

If you’re lucky enough to have a nearby store that sells crumpets, try making this English-inspired breakfast sandwich. Crumpets are similar to English muffins, but their tops are full of craters and you don’t split them as you do English muffins.

Makes 1 sandwich

1 large egg

1/2 teaspoon minced capers

1 tablespoon cream cheese

2 crumpets

1 ounce smoked trout or salmon, broken into flakes

1Preheat the breakfast sandwich maker. Break the egg into a small bowl and pierce the yolk with a fork.

2In a small bowl, use a fork to mash the capers into the cream cheese until well mixed. Spread onto 1 crumpet. Place the crumpet, cream cheese side up, in the bottom compartment of the heated sandwich maker. Arrange the smoked fish on the crumpet. Lower the middle plate.

3Pour the egg into the top compartment and cover with the other crumpet. Close the sandwich maker.

4Cook for 4 minutes, or until the egg is set. Slide open the middle plate to assemble the sandwich and remove it from the sandwich maker.
