CHICKEN PORK ADOBO

Serves 6-8

1/4 cup oil

1/2 kilo pork kasim, cut into cubes

1/2 whole chicken, cut into serving pieces

1/2 cup garlic, chopped

1/2 cup soy sauce

3/4 cup vinegar

1 tablespoon Worcestershire sauce

1 tablespoon whole peppercorns

1 cup water

1 chicken cube

1 piece bay leaf (laurel)

3/4 cup oil

3 tablespoons fresh garlic, chopped

Mix garlic, soy sauce, vinegar, Worcestershire sauce, peppercorns, and bay leaf in a bowl. Pour half of the mixture over the pork and the other half over the chicken.

Drain the pork and reserve the marinade for later use. Heat oil and sauté the pork. Add water and chicken cube. Pour the reserved marinade over the pork. Cover and simmer for 30 minutes. Add the chicken and simmer for another 30 minutes.

Sauté the garlic in oil in another pan. Pour over the cooked chicken and pork.

Optional: You may also add 1 cup of coconut milk while simmering to make Adobo in Coconut Milk.
