SWISS CHARD BETA VULGARIS

This nutritious microgreen with a sweet beet/spinach flavor makes a sprightly garnish and a welcome addition to salads with its dark-green leaves and colorful stems, depending on variety. There’s a rainbow assortment of chard varieties in hues of red, yellow, orange, white, and purple.

As with beets, make sure the large, knobby seed of chard is fully covered by soil when sown. It will germinate in about 6 days and be ready for harvest as a microgreen in 12 days. For the petite size, wait 14 to 20 days before cutting.
