Care

Keep the potting mix moist and watch out for slugs and carrot rust fly; if the latter attacks the roots, the foliage will turn reddish. Parsley likes partial shade in summer. In warm climates, outdoor sowings do well in winter; a crop cover improves the leaf quality. In cold climates, move the pot indoors to a sunny windowsill.

Flat-leaf Italian parsley has leaves that look similar to cilantro, but they have the same flavor as curly parsley.

Harvesting

Cut the plants with a pair of scissors as needed. The stems add plenty of flavor to stocks; however, they are tough to eat raw, so for salads only snip off the leaves. Surplus parsley freezes well, either chopped and frozen in ice-cube trays with a little water, or cut the stems and leaves and freeze in plastic bags.
