Single Varietal Ciders from Common Apples

Cider apples are popular, as is blending different varieties to make a more complexly flavored cider. However, there is no reason not to make cider if you only have one apple tree, or your local orchard only has culinary apples, or you can get a case of apples on sale at the market. Plus, there is something fun about seeing what an individual variety has to offer so that you know what it will contribute to a collage of flavors.
