As for me, I believe in practicing what I preach. Throughout all this, Artichoke and Edible Gardens have been working hand in hand. Their crew continues to manage and maintain the restaurant’s 300sq ft garden. Our stacked crates are teeming with all manner of mint, borage, basil, tomatoes, baby eggplants and more, which we use in relishes and condiments. They put us in touch with anyone new who grows local produce. It’s all ridiculously symbiotic. Bjorn and I have collaborated on dining events, given Earth Day speeches on sourcing locally and urban farming, and contributed to countless media interviews.

It ain’t easy being green, a famous frog once said. But it sure as hell is a whole lot of fun.
