This old school French-inspired veal stew starts out lean—blanquette meaning that neither the veal nor the butter is browned—and then hits the jackpot with rich crème fraîche and egg, with a hint of lemon for a smooth texture. It can be maddening to make the first time, because it goes against every cook’s desire to brown and sear, but avoid the temptation and you will be rewarded with a silky bowl of comfort food. I’ve added some mushrooms to the mix and like to serve this with steamed rice or hot buttered noodles. The point of this dish is its all velvety whiteness, but if you must, add a sprinkling of chopped fresh parsley just before serving.
