SAINT-FÉLICIEN AND PORTOBELLO MUSHROOM SANDWICHES

MAKES 4 SANDWICHES / 10 MINUTES PREP TIME / 5 MINUTES COOKING TIME

2 portobello mushroom caps

2 tablespoons butter

4 good quality rolls, such as ciabatta or sourdough

1 round Saint-Félicien cheese or similar small, runny, washed-rind cow’s milk cheese (such as Saint-Marcellin)

Cut the portobellos in wide strips and sauté them in the butter in a skillet over medium heat for about 5 minutes. Split the rolls and evenly divide the cheese and mushroom strips between them. Serve hot.
