When the cowboys head out to camp for the summer and “babysit” the cattle, John decides that being under the stars with them might help his grandson, Tate, get over the trauma of his kidnapping. Tate sleeps for the first time in a long while without having nightmares and wakes up the next morning ready to go fishing. When he asks his grandfather if he woke too late for fishing, John answers, “Trout are like bankers. They never do a damn thing in the morning.” He then turns to Tate and says, “You should bring the net if you plan on a big one.” Tate is excited to make his fresh-caught fish, using just a squeeze of lemon from the chuck wagon. This recipe is about as simple as that, but trust me, it’s delicious. And it works well on almost any meaty fish, such as pike or cod, but I tend to use walleye because it’s a great fish that is common in Montana.
