Instructions:

Season the lamb shoulder with garlic powder, crushed red pepper flakes, salt, thyme sprigs, rosemary sprigs, and black pepper. Refrigerate overnight.

Press the “Sauté” function on your Instant Pot and add the olive oil.

Once hot, add the lamb pieces and sauté for 5 to 7 minutes per side or until brown. Remove and set aside.

Add the onion and sauté for 3 minutes or until translucent, stirring occasionally.

Deglaze your Instant Pot with the dry white wine and allow to simmer until half of the liquid evaporates.

Return the lamb to your Instant Pot.

Lock the lid and ensure the valve is closed. Press the “Manual” button and cook for 50 minutes on High Pressure.

When the cooking is done, naturally release the pressure and carefully remove the lid.

Transfer the lamb to a serving platter.

Press the “Sauté” function on your Instant Pot and stir in the fresh lemon juice, chopped tarragon, chopped oregano. Turn off the “Sauté” function on your Instant Pot

Ladle the liquid over the lamb. Serve and enjoy!
